How do we know it's not all just dyson spheres?

Because dyson sphere's wouldn't hide the gravitational field of the star. There were extensive gravitational lensing surveys in the 90's to search for compact dark matter, and in the end models like this were ruled out.

Dyson sphere's wouldn't be totally dark, they would have to emitt at some wavelength.

Also dyson spheres would be made of normal matter, which would have to come from somewhere. Measurements of primordial nucleosythesis and the statistics of the cosmic microwave background show that dark matter cannot simply be normal matter. It has to be non-baryonic.

We don't but it would be very unlikely because a dyson sphere or swarm doesn't hide the gravity which could be caught with gravity lensing. The sphere would also glow infrared assuming normal physics applies, if they weren't their internal temperature would continuously rise which is most likely something no species would want.

Obviously there is always some chance we missed something or that there is some tech that would allow to mask the spheres from the outside but practically that's not happening and would most likely require rewriting the laws of physics which is something you obviously want to avoid by coming up with "mundane" explanations for dark matter instead of just accepting it's something non baryonic.

Dark matter is actually regular matter that has been through a black hole. Eventually all the matter in the universe will be eaten by black holes and turned into dark matter. Then white holes will form that eat the dark matter and turn it into regular matter when it comes out the other side. The universe is incredible and fascinating
