why are accurate election predictions so difficult when there is so much data available and we now have the computing power to make sense of it?

the special interest groups that actually set most policy usually don’t do this by getting one candidate in over another but instead by having both on the payroll. fudging the results of the most watched election in the world would also be pretty noticeable to those who know what to look for. it makes sense for the system to have legitimate elections, and make sure they don’t have much impact either way.

purely from a statistics perspective i’m interested in why these things can’t be predicted with the amount of data out there.

In such a situation, it can absolutely be predicted. But there is an alternative explanation: they lie.
Their saying they can't implies a level of chaos, which implies a lack of control by higher authorities, which implies that voting matters. A people believing that voting matters placates them to some degree - placation being a cheaper method of control than mass arms and overt violence.
