brainlet here, how do helicopters descend? Can they descend faster than gravity? Or do they simply slow their rotations to allow the helicopter to fall?

The pitch on the blades adjusts to descend or ascend.
To travel forward the blade pitch will dip in a pulse with every rotation to tip the whole machine forward

This is true, but having a positive collective while upside down is the same as having a negative pitch collective while the right way up

So yes, they can without flipping upside down
