So right now there's cars that are hybrid right?
They basically have a motor that runs on gas that in turn powers an electric motor which runs the car
Well what if instead of making a gasoline-electric hybrid we made a hydrogen-electric hybrid
The hydrogen would be used in the combustion engine which would in turn power the electrical motor to power the car
The efficiency would be phenomenal and we could get the hydrogen from simply electrolysis of water

That's the catch. You need energy to do this, so what you're actually doing is storing energy in the form of hydrogen, think of it was a battery. You need to find an energysource that lets you produce hyrdogen from water.

Protip: one of the most accessible sources of hydrogen is hydrocarbons, especially oil and coal.

Moving from gas and oil power to hydrogen power will do nothing to cut our dependence on fossil fuels.

The problem being the source of energy that the factory would use. All options are rather meh. If coal, you might as well use a combustion engine. I doubt it would be possible to have enough nuclear power available. Fusion would work, but it isn't efficient enough yet.

Then there's also the material for the fuel cells. Currently platinum is used, since it is safe, but there's not enough on the planet. Some ceramic materials would surely work, but currently there are none that are as good as platinum.

Conclusion, fuel cells aren't currently a viable option, but most likely will be in the future.

It's far cheaper and infinitely less complex to simply use the hydrogen source as fuel instead. No need to manufacture specialized vehicles to use specialized fuel cells in specialized engines. You can burn the fossil source at a power plant and store the power in a battery to use in an electric car, or you can turn it into gasoline and use that to drive a bog-standard car.
