I've been thinking that just training people to do what we need them to do would be better and cheaper because you can pay them less and it creates a dependency.

I agree with that, thats how America was made great, back in the day if you had a talent for something you could be hire without the need for an expensive college degree, your talent was your curriculum this also allowed a more efficient social mobility (if you have the talent you could easily get in higher positions/better salary) so at the end of the day it created a virtuous cycle for the whole country

STEM is not for people who want to just make big bucks, it’s for smart people who have passion in STEM. People like you ruined the STEM by barely making your degrees and thus diluting the worth of the degree. Now you have to have major in any STEM to at least be somewhat respected and work as a researcher that can afford some quality of living.

This. Trust me you won't get rich in STEM I literally own a business and know other people who own businesses in chemistry and other stuff. It's not even the smart people who make money for the most part. It's about having a polished pitch, a clean idea, good connections, constant effort, and social skills. A business degree will also help. If you want money, become a plastic surgeon or become a CEO. Be prepared to have nothing in your life but money *if* you make it. No wife, no life, no kids. Balance is a meme, your competition will be a dude who lives on 3h sleep a night, knows everyone in the industry, and bangs Adderall like candy. you'll need to beat him.

CS itself is a research field that exists beyond software or software engineering. Doing the basic plug n chug calculation in EE, or doing VLSI and CPU design does little to teach you how to tackle CS problems, except in architecture.
Either way, even when it comes to software engineering, writing software is part of screening but not really the most salient part of a google job - your skillset is largely about solving hard problems regardless of what background you have. I've seen software guys go into hardware design and vice versa given enough experience.

Funnily enough, I know 3 people who got CS PhD's working at Nvidia and Intel for core architecture

I got a degree in physics and comp sci and work as a research associate and really like my job, but it doesn’t pay like a typical career. I’m now going for my masters in EE and CE because I want to one day have my own tech business with my own products. The money is in entrepreneurship, but I’m gonna milk the industry for 6-10 years for career money and paying off student debt. One of my physics profs that I worked closely with told me not to seek a Ph.D because I got skills with my hands
