Most of the oxygen on Earth is produced by them and with the ongoing ocean acidification and pollution, is there a real possibility of a great die off in phytoplankton because of climate change? Thus slowly asphyxiating us?

We'll adapt alright, we can adapt to lack of nutrients just "fine" over a thousand milleniums, so I'm pretty sure we can adapt to a little drop in oxygen
However we won't last as a 7-billion civilisation for much longer, way too little ressources to keep that growth for another millenium/century
