I'd say the majority of the population isn't that much smarter than the decently smart kid at a state school, though they usually have some other characteristic that distinguishes them (some talent, athletic ability, interpersonal skill, etc.). Did my undergrad at a school not in the Ivy League, but competes for cross-admit students and stacks up with some (not all) of them. Yes, there were recruited athletes who wouldn't have come close to admission. And, yes, there were sons and daughters of big donors wouldn't have gone there had their parents/grandparents not donated tons of money. Were they genuinely "dumb"? I'm a math PhD student at a top school who did my undergrad at a middling school, so I've seen both sides of the aisle.

From a TAing perspective, the kids at a top school are a lot more fun to teach. Most of them are curious and well-prepared to tackle more theoretical topics. I can go into fairly technical proofs and expect them to follow. Students at the state school I went to as an undergrad, which was still known as a "public Ivy", were mostly unmotivated and unprepared for advanced STEM subjects. The top 5% at the state school I went to would easily have succeeded at the Ivy I go to now. They would not, however, be the top 5% of the school I'm at now. They would be the top 25%.

The top 5% of a top school's undergrads is smart enough for me to assign them research problems and expect results. There are only a handful of students, maybe the top 0.1%, at a state school who I can expect this of.

The bottom 50% of both schools aren't great, just the ones at an Ivy work harder so it's easier for me to TA them, which I do appreciate.
