is the human brain the most complex object in the universe?

It's not even the most complex object on Earth. You're forgetting about the plot of Rick & Morty and its intricate and obscure references to pop culture and science.

It's pretty mind blowing what it does

A clamped and vaccinated brain is less complex than a normal brain, however.

No. Consider the object {human brain + velocity of a particle outside the brain}.

Do we do more reliable research on human bodies because we deem that science more important to our people, or other creatures because it's easier to get your hands on living/dead test subjects of other organisms?

Not even slightly. It's beyond reasonable doubt that live exists on other planets than Earth, and it's likely that we are fairly average in terms of life-form complexity. There are bound to be aliens with hyperbrains so complex they confound our understanding.
