Here's the reality from someone who actually is about to finish a PhD and head to Wall Street. There is still demand for mathematicians with strong backgrounds in fluid dynamics, numerical PDE's, or stochastics. The real place of growth, though, is in algorithmic trading whose PhD's tend to come more from CS.

A good entry point for a PhD would be at the VP level where he could plan on a starting salary of around $120,000 + bonus. At some firms the first year bonus guarantee can be as high as $30,000 and of course there is not ceiling. PhD's can also come in as level 2 or 3 analysts, but they'll make $20-30,000 less.

Outside of the banks, salaries are more variable. Some hedge funds might bring you in with total compensation closer to $200,000 but it would all be back loaded in the bonus.

A string candidate would have the aforementioned math background, good knowledge of C++, VB, and Matlab. Networking helps. Their day to day job would be about ten hours of coding pricing models and taking abuse from traders. That's in the front office. Back office quants would have better hours and less stress but the bonus potentials are not nearly as high.
