There's as many reasons as there are killers.

Mostly, I'd say it's a matter of power. Often a serial killer feels powerless in their day to day life. Commonly this is a deeply embedded response to (physical) childhood trauma where the child is physically powerless to stop a savage beating, etc. The mind fixates upon the sensation and desperately seeks it's relief. Well that's just one reason, but a common theme.
