the question is, how much?

does anyone have any studies on this? e.g. 10% increase in cancer, or 3 years off your lifespan, etc?

butter and lard don't cause cancer. if you burn butter or lard, firstly, there is not as much O in the chemical change to cause free radicals, and second, their reduced states do not become polymerized like vegetable oils. lastly, they are more stable, thus, harder to even burn

the only' problem' for lard and butter is the ratio of omega 6-3, and this can make heart disease orse IF you already have it. the entire idea is that vegetable oil has a better ratio of 3 to 6, thus it reduces heart disease (IF you have it) but the cancer risk is NOT a good tradeoff because you can improve your ratio by eating fish and the like.

butter and lard are fine for you IF you're not obese

The real question should be: Why do you feel the need to use oil when cooking your meals? It's unnecessary. Eat a whole foods plant based diet. That, by definition, excludes oil. Ideally your food would be steamed in order to retain the most nutrients. On the other hand, potatoes and sweet potatoes can be boiled as this lowers their glycemic load, and if you let the potatoes cool before eating, they have more resistant starch.

If you're worried about taste when eating such a "bland" diet. Don't be. Our taste buds are overstimulated. Yes, in the beginning plain vegetables may be tasteless, but in time you will be able to taste the sweetness in various vegetables that you never could previously. You may be able to "speed up" this process by water fasting for a few days before making the diet change.
