Particle physics is you're incredibly smart.
Genetics, if you're decently smart.
Computer science other wise.

But so help me God I will not be held accountable for my actions if I encounter ONE MORE applicant who hasn't used a functional language, or can't build a computer, or says C++ on their resume when they really took 3 credits as a junior... basically any comp sci grad who just coasted by for the $$$ and doesn't actually care about computers or programming. If you aren't willing to put in the 10,000 hours for mastery or however many go into business, get paid and make sure I never end up in room with you.
Sorry I had to vent. Go into AI, if you're willing to sink the thousands of hours in to the maths AND the actual computer science theory of AI then you will have a very bright future.

Sometimes, it really depends. Usually mice are used specifically for their likeness to humans (e.g. LD50 for poisons). So you would use mice (usually) to determine if something was relevant to humans, such as if you were developing a new drug or researching a disease.
Remember that genetics is at it's core chemistry. Specifically, applied organic chemistry as it pertains to molecular biology.
You could just as easily be researching geckos (isolating the gene for their adhesive feet) to cockroaches (intelligence, behavior) to fruit flies (mutation) to spiders (learning how to spin silk which is 4x stronger than steel).

E.g. 15-20 years ago they actually tried to take the silk genes from a spider and splice into a goat's genome so instead of milk proteins it would spin spider silk. Sadly they discovered that the spinneret (the spider's organ that "spins" silk) is actually as important to making spider silk as the actual protein itself. But it was an important discovery nonetheless.

Here's the most important thing: CRISPR (new gene editing technology) has changed the genetics game drastically. Like the steam engine did for industrialization. If you get in now you might be as well-positioned as an aerospace engineer after World War I (if they were even called such back then). There's such an amazing future in genetics specificallly that you'd have to basically be jailed for a decade to not have at least a financially successful career. Just know that you'll have to get a PhD and get into a good grad school/doctoral program.
