We were told these things at the same age that children are told that Santa Claus exists, and we accepted them without question. The difference with the creationist obsessed with evolution is that they don't obsessed over ways to undermine the existence of their fellow man they co-exist with them. Then you don't understand what heritable means in this context. Heritability is the proportion of variance of a trait within a population that is attributable to genetics as opposed to the environment. This is estimated using adoption studies.
"Most cases" yes, you speak the same language as your parents, because you are raised in the environment provided by your parents. When the environment varies then that trait varies. Ergo, 100% environmental. This is not the case for things like intelligence, height, personality etc. etc.

High heritability does not mean you can jump to genes being the cause for the gap in the IQ. Environment will still have a great impact on your intelligence, the Flynn-effect shows IQ rising in most populations faster than what genetics can account for. Evolution just doesn't work that fast.

Remember that height is comparable to IQ in heritability, but North-Korea is still shorter than South because of malnutrition.

Adoption studies doesn't remove environment. You will always have the same prenatal environment and early childhood, which is very important for your development. You will still grow up black, and we know culture, media and how people treat you has an impact on how you develop. And adoptive families are a pretty select group, its not like we are comparing a bunch of twins separated by country and culture. All of this and more will contribute to higher heritability.
