1. What do you need a Dyson's sphere for? Livable land area? Even to fill a single One, you would need what- A trillion people? 100 Trillion? Even more?
Why would you want to concentrate all those people; for what purpose? The only reason I could see is turning the non-livable materials/spaces of the universe into ones that are habitable by organic carbon based life that hasn't embraced robotics.

2. What's more you need the mass and materials to actually build; so you would actually need to completely strip thousands of star systems, if not more, of all their extra solar mass (less if you have a way of changing the mass of gas giants into usable metal via fusion.. or whatever). What this ultimately means is that for every star you encase, there would be thousands that you didn't.

3. Assuming you built it to harvest the energy of a star; what would you need all that energy for? You already have the materials and means to harvest entire planetary systems and move their masses between interstellar space. Assuming that future societies don't discover some exotic energy source that far exceeds the efficiency and output of a star; what would you even use that energy for (death star lasers aside). It would have to be exotic, whatever it is; extra-dimensional travel? Warping the fabric of space time?
