Helium is not found in nature in concentrations that were dangerous to your ancestors. Detecting it was not binificial to their survival.
Hydrogen sulfide, perhaps the most dangerous super conductor is detectible by human noses at levels as low as 0.3ppm, your ancestors were the ones who were able to avoid deadly levels of this superconductor.

Our primary mechanism to increase oxygenation of our blood is not directly run by the lack of oxygen, but rather the abundance of CO2.

The real question you should be asking about is why we are not able to identify deadly levels of CO-lorado.
