What does it mean to be a man, scientifically?

When someone says they identify as a man, what does that actually mean?

For example, if someone asked I would just say because I have a penis, but then people would say that is sex and not gender. I would respond with things like I enjoy science, video games, hard rock music, etc. But really, these are just personality traits.

What does it really mean to perceive yourself as a man? I know this is more psychology than hard science, but I think this is the closest I will get to understanding what the LGBTQ... community means when they say gender identity.
