I went to UC Irvine and for six quarters of math and four of physics we were never allowed to use any notes. You had to memorize every formula, and no calculators on tests. Also tests had to be done in ink or you gave up your right to a regrade if you thought there were grading errors.

Take the following and you will be fine:
- numerical analysis
- linear programming or numerical optimization
- probability
- statistics
- pde
- actuarial math
- math of finance

Your goal should be to come out a numerical C/Matlab coder. If you have room then a course in combinatorics and number theory would be useful.
