Because we can measure that.
Specifically, we know that the greenhouse effect is warming the Earth because the stratosphere is cooling. We know that CO2 is the cause by looking at the spectrum of outgoing IR. We can trace the carbon in the CO2 back to fossil fuels by looking at the ratio of isotopes.

All of which is measurable. If the tide goes down here it's going up somewhere else.

NOAA runs about 240 tide stations. Plus there's satellite observations.
