What constitutes a mathematical proof, and what's the point?

This guy proved Fermat's Last Theorem. It was insanely hard and involved countless other fields of mathematics.

What the hell did he do that turned conjecture into pure hard undeniable "truth",

sincerely, a physicist pleb who uses mathematics but doesn't "understand" it.
