Seed oils have multiole draw backs:

There are multiple expensive and energy intensive steps required to get the oil from seeds and also in a consumable state.
Seeds do not only contain good oil but also shitty rancid fats, and saponins.
To get rid of this you are required to use a large supplychain by getting chemicals delivered, like Sodium Hydroxide.

This additional step introduces costs and a impact of the carbon footprint since this product has to be produced with a energy intensive method.

While Olive oil for example just needs a large stone and a donkey.
Or Milk requires some gras. And the cow turns grass into fertilizer and Milk, which you then shake and you get butter.
