There are a whole bunch of types of depression. There's even one to do with the seasons. Depression is extremely hard to get rid of my definition, from what I understand. It's not uncommon that people just deal with it for their entire lives. Lapsing in and out until they die. That's what makes it depression.

You say you want a penny to "sink through" the following

-Average mattress
-Container of fine sand
-Earth

By "sink through" I'm going to assume you mean under the acceleration of Earth's surface gravity, the penny will exert enough stress on the body that the body material will fail immediately.

By "heavy" I'm going to make the assumption that this is not the word you are looking for but rather "density" because making a penny "heavy" means making a penny "larger" and this does not coincide with your goal of piercing (somewhat) standard objects.

The path I would take in looking for a solution.
Find the instantaneous force required for a penny to pierce the object.

For simplification, assume the penny is a sphere. Ultimately this will require less force than a flat face of a penny but who gives a shit.

Get kinetic energy of a bullet
Calculate instantaneous force of a bullet striking an object
Use this force to calculate mass required under Earth gravity for equivalent force
Use this equivalent mass to calculate the required density of the penny

I'm not going any further with this.
