A plant based diet can contain as much nutrients as you need and all except B12.
As a matter of fact excess of certain nutrients, even water as you know, is toxic.

A meat based diet might give you what the body needs as a base to survive, but a meat based diet doesn't optimize the body for longevity, hence it's not the optimal diet for health. You can live on food from mcdonalds too but it doesn't meant that it's a good diet.

Humans didn't evolve to eat a specific diet because that's not how evolution works, all that's needed is a diet that let's you survive past 20 and let's you procreate. So as said earlier, a mcdonalds diet is good enough.

However if you want to study health, longevity and what's the most beneficial for the human body you can quickly see, just as all longevity scientists that a plant based diet is MUCH healthier for the body.

Maybe meat gives excess of a certain amino acids, maybe it's too much protein, we don't know everything yet but plants as of current research are better for health. Excess protein does at least age you faster, that's known. Excess protein overstimulates IGF1 and mTOR which then ages you. So maybe it's even because they lack nutrients, maybe you're overdosing on certain ones on a meat based diet and they cause problems making you age faster, hence die earlier
