You are pushing propaganda
Human's gut track largest part is the part specifically for meat, in comparison the smallest part is for plant material. this is different than other primates. Some other primates spend 80% of the day eating. Gorillas spend 50% of the day [https://www.berggorilla.org/en/gorillas/general/everyday-life/what-do-gorillas-do-all-day/], with is why they have large colons to digest nutritionally low density food.
Vegetarians cant even live without supplements, and even then they get brain damage after 5 years.
Your statement is pure wishful thinking. Meat is what made our brains get bigger than other primates, its incredibly calorie dense, especially when you eat organ meats.
lasty, yes I know people claim otherwise, "a pound of broccoli > pound of meat. " but that is incredibly misleading because a pound of broccli would fill plate and half and your entire stomach. You would have to eat 24 cups of broccoli to match a steak kcal, which is why other primates that eat plants spend all day eating

They used gorillas as the comparison, so I based my answer off of that. If you ate like a gorilla and expected to look like a gorilla, you would end up very disappointed. Herbivores generally eat foliage, grass, bark, and other difficult to digest plant material, otherwise they're referred to as frugivores for clarity. The digestive requirements are very different.

Fruit's fine, though I don't think it's ideal to be the staple of a diet. Humans adapted to cooked meat and starch, and high consumption of those foods coincided with our brain growth. Fruit's generally a lot of water and not calorically dense.

They have a completely different digestive track and spend 5times as much time eating because thier diet is low quality nutrition and they have longer sections to digest it. We would not be able to evolve the Brains we have with their diet
