Determinants seem to come out of nowhere, with a weird formula for computing them, and get used as a shortcut in all kinds of proofs. Students are told it has something to do with volume and orientation, which helps a bit with the intuition sometimes (e.g. it makes sense when checking if a matrix is invertible or not) but is hard to connect to the definition, and doesn't help much with understanding the proofs that use it.
