I'm a chemistry minor and I need just one more chemistry elective.
What would be good a class to take?

My major is Microbiology and I'm interested in biotechnology, medical research, and molecular biology of proteins and such, but I want something that's not going to be as hard as organic chemistry. I need a guaranteed A to raise my GPA but I also want something interesting and applicable. Options will be in following post.

Can a chemist explain to me how you determine the relative number of elements in a certain substance?

For example nucleic acids. When you got them separated from all other cell parts by centrifugation, how can you tell that they consist of four nucleobases and that they are build of e.g. 5xC, 5xH, 5xN and 1xO for guanine?

Books only tell you the result but not the way how to get there.
