They don't literally jump. They jump to a very good approximation in many circumstances. You can go into the details with some calculations, although the detailed physics of how an electronic wavefunction evolves during atomic photon absorption are going to be complicated.

Collapse of the wavefunction isn't really part of QM. It's an interpretation. As far as we have definitively observed, all QM is fundamentally unitary, although you can make a non-unitary theories versions of QM which is useful for various applications. But they are not fundamental (to my knowledge).
