Simply, glucose and oxygen go through a redox reaction to form carbon dioxide and water.

Everywhere I look I find that it says glucose is oxidized into the carbon dioxide and the oxygen is reduced to water.

Counting through the valence electrons it seems to be the opposite; that glucose was actually reduced to carbon dioxide while oxygen was oxidized to water.

If someone could help me out thanks.
