That engine was probably wired with extra sensors for testing, but it could also be that SpaceX places more sensors in their rockets to get better telemetry during flight.

The price of larger rockets has gone down significantly over the past decade, and even the largest rockets flown are still easier and cheaper than any anti-gravity project. Why? Because a rocket can be made with today's materials, meanwhile anti-gravity would require the use of exotic materials which hasn't even been confirmed to exist. Not to say that anti-gravity is worthless, nor that ti shouldn't be pursed, but there's far more sensible use of resources.
