Being optically thin means light can pass through it. If it wasn’t optically thin, then you wouldn’t be able to see past the accretion disk and so wouldn’t be able to see the shadow caused by the black hole, which makes the whole excercise pointless.
They are checking to see if it’s possible under the ideal case of it being optically thin. If it isn’t optically thin, then the images will just be of the accretion disk, and wouldn’t be able to show the stars behind it or a shadow, since it would act like a wall.
