How do I get out of this soul crushing cubicle/open office nightmare? I can't take it anymore.

I thought being an engineer would give me a fulfilling career of solving challenging problems, but it's not like that. When starting a new job there's lots of new challenges and things to learn for about six months, but then it becomes so boring and easy I have no sense of fulfillment and get depressed. For awhile I was starting a new job every year to cope but I've had to stop that because potential employers see the pattern and are scared to hire me. I chose exciting sounding jobs working with interesting technology but it was always the same.

Is academia any more interesting and fulfilling? I think getting a Master's or PHD might solve my problem but I'm worried it will be just more of the same.
