And to add to that, dog breeders can and do create new stable breeds from a mixture of other breeds, though it takes time and selection pressure. You can see the same thing with humans, albeit taking much longer - a good relatively recent example of this process is the Mestizo population of Latin American arising out of a mix of Spanish & Native Americans (and the occasional splash of Africans too), which still shows a fare bit of phenotype variation in the range of their ancestor populations.
