In europe being more white than the average was perceived as beautiful in the medieval ages because it was an indicator of not having to work (in the fields outside).
Fatness was also perceived as beautiful back then because it meant having more resources to deal with crises and generally being more rich/having food to eat. You can even see this trend in the art back then. Many of the paintings from the baroque depict pretty ugly people. But back then they were considered masterworks.
Offspring fitness is all there is to it.

I wonder if the supposed modern attractivity of white people also has to do with how much facial information can be read (i.e. in black people you can decode how much they need to work less by their face color).

This also probably influences the supposed attractivity of mediterranean males compared to nordic females: Men should be able to work (be out in the sun) whereas women shouldn't. (At least in conservative societies, but that's what we're talking about anyways. In liberal societies this trend also explains why whiteness is perceived as beautiful only to a lesser extent, if at all.)
