The tl;dr version is that each atom has some miniscule amount of gravity and when you get enough the start to pull each other with more and more force. With round things the force is distributed equally. This basically 'crushes' very rough edges into a more spherical shape. One example of a world which does not see this is Mars' asteroid moonlet, Phobos. ~22km diameter and an ugly lumpy potato.
