Riley-Smith's The Crusades and Hillenbrand's. Riley-Smith gives a Catholic perspective and Hillenbrand an Islamic.

Christopher Tyerman's Gods's War is worth a look.
Also, you could focus on some of the religious orders. The Monks of War: The Military Religious Orders by Desmond Seward was interesting.
I like the Templars so found The New Knighthood: A History of the Order of the Temple by Malcolm Barber to be super interesting.
