What are some good books on the Theatre?

Particularly looking for non-fiction books interviewing actors and so on. Non-pleb stuff preferred.

Nothing comes to mind, though I read more stagecraft studies than anything else. I'd certainly say that having a command on the director's process would further an actor's skill set, though. Success is all about working and spreading influence.

I get the vibe that you're an aspiring actor, rather than just interested, so I'd still suggest you give it a read.
