I'd push for Njal's Saga. Egil is a highly entertaining character, but I wouldn't place him on a pedestal as a example of manliness (for example, there were moments when he exhibited very little self-control). Njal's Saga has some characters that are a little rowdier (e.g. Skarphedin), but the two central characters are very respectable. Njal doesn't kill anyone, if I recall correctly, but he doesn't shy away from danger or death, either. His friend, Gunnar, is a great warrior, but prefers peaceful reconciliation to fighting.

Having said that, Egil's Saga is still my favorite.

If you're a fan of Ernest Hemingway then I highly suggest reading some of his short stories. The Undefeated is probably my favorite of his short stories but A Farewell to Arms really brought out the 'manliness' in me when reading it through.
