I think his writing his extremely intellectual, which I really appreciate. But what I find most fascinating of his short stories was his ability start them: For many of his short stories, the opening line gives you so much back story and all the information you need to know, which is something he irrefutably mastered.

I've only ever read The Metamorphasis and The Trial. Was looking at getting into The Castle but I'm already midway through three other novels.

He wrote it right before he died, when the turburculosis or whatever in his throat was so inflamed that he couldn't eat, so he literally starved to death.

Just look through Parables and Paradoxes, which are a collection of his short stories, and you'll be sure to find some you'll enjoy. I will admit, though, that I haven't finished reading them all.

Not OP but if you're after something short The Passenger, Clothes and The Window on the Street are all good - only about half a page each.
A Fasting-Artist and The Judgement are probably my favourites though.
