Is the progression of thought one dimensional in the sense that it can progress infinitely in one direction but is restricted from expanding in any other direction? If so, does this mean that God can think in an infinite number of dimensions, and trying to understand Him is like trying to envision a cube with just a y-axis? Are there any philosophers that explore this idea?

No because we don't "think" in a direction or dimension.
