I just got these in the post today (bottom left is 'Things Fall Apart'), and I was wondering what you guys would recommend starting with, I'm leaning towards Peace, but I just finished Wolfe's WizardKnight and I might burn out on it.

I've already read Mandel's "The Lola Quartet", so I'd recommend Station Eleven for her prose alone. Can't speak for SE's plot, of course.

Peace is objectively the best of those purchases. My personal favorite Wolfe. It's nothing like most of Wolfe's other work so if you're expecting a high fantasy or sci fi story, it'll be a good change of pace.

The Master and Margarita is also fantastic. Start with these two.
