I completely agree with anarchy on paper but severely doubt it can be applied practically. Is there a name/school of thought for this? Anything I could read to gain some perspective on this?

Agorism is a good example of anarchist thoughts put in practice daily in everyday life.
Even if it does not work and we do not end up in anarchy it is an end in itself: by practicing agorism you help diminishing State power

also this is pretty much the right idea you're having, just establish a small community with likeminded individuals. the point is having people see it and realize their 9-5 job is not the only way to survive. XIX century philosophers had other goals in mind other than practicality when they theorized about anarchy, though do read some of their stuff if you're interested.
Also go to anarchist sites. The people there share a lot of interesting stuff among writings, books, essays, projects, other websites and whatnot.

You can literally claim that any idea, or concept ... cannot be applied to reality but in reality there's always a way to put theories into practice democracy for example

yeah, there's like tons of people who used to say that democracy or welfare couldn't be implementer or would make civilization end or some other shit. it doesn't matter though, everyone will get this response 9 times out of 10 when talking about anarchy. I'd rather know him trying to work something out for himself than abandoning the idea completely.
