Cowboy Bebop and Samurai Champloo have a lot of literary references and allegories going on that i wasnt even aware of the first time i watched them, but it really just made the shows that much better the second time around

Compared to the manga sure but Akira is still a great film. I assume that you are talking about good /lit/-type anime though, because if we're going just straight off good anime then there are many more (SnW, Mushi-Shi, Baccano, Anohana, Kenshin, Bebop, Trigun, FMA:Brotherhood, GTO, etc).

Aoi Bungaku is an anthology series that adapts 20th Japanese literature like Kokoro and No Longer Human. People say it doesn't do the books justice, though.
