I don't know if I could choose just one book for every language, but it's easier with authors:

Shakespeare (Its is possible to choose only one?)
Cervantes (Don Quixote for sure)
Proust (In Search of Lost Time)
Tolstoi (Anna Karenina or War and Peace)

And it still would be a pity. How could we forget to mention Melville, Quevedo, Hugo, Dostoievski, etc.?

Also, why didn't OP include German? Anyways, the book chosen would be Faust or The Magic Mountain. Probably.
