Its called a deckled edge! (I learned that here). Also, if the book is less than a couple hundred years old its a fake deckled edge made to look that way. I really like it though, some of the deluxe penguins like their Steinbecks do it and to me it looks and feels great.

I think it's just the ease of turning the pages and how thick the pages are. A few hardbacks come out these days that are deckled edge.

I have several books that I've had to knife open by myself that are nowhere near 100+ years old. Some are from the 40's and 50's, but still.
