Do you plan to read it at home or outside as well? How much money are you prepared to invest?
Anyway this paper back is quite nice:
http://www.amazon.com/dp/0007489978

7 small books (since Lord of the Rings is actually 6 books + appendix) to easily carry around if you are out.

The standard 1-book paperback edition:
http://www.amazon.com/dp/0261103253

The standard 3-book-boxed edition:
http://www.amazon.com/dp/0261102389

Enjoying a more luxurious one-book (Hardcover) edition?
This one isn't bad, but it's really huge:
http://www.amazon.com/dp/0261103202

This one's a hardcover boxed set together with The Hobbit, I really like the style:
http://www.amazon.com/dp/0007522932

The current standard edition paperback box for Hobbit + LOTR:
http://www.amazon.com/dp/0261103563

Another Paperback edition together with The Hobbit, these ones are illustrated by Alan Lee:

If that last one is anything like the HC (which I have) you'll be very pleased.

Try to avoid the editions that say "Now a major motion picture" or have all the movie related stuff on their covers, they look awful.
Furthermore try to avoid editions printed before 1991 (Harper Collins/Grafton) and 1994 (Houghton Mifflin Harcourt) respectively, they still have a lot of typos.
