If you really liked Guns, Germs, and Steel you should definitely give The Selfish Gene by Richard Dawkins a try. Both take a subject and make it infinitely more clear, yet also more nuanced by putting it a new light.

Not really related to Guns, Germs, and Steel but if you just want to learn more science/history I would really recommend A Short History of Nearly Everything by Bill Bryson.
Also watch Carl Sagans Cosmos. I really cant stress enough how much everyone should see that series, its only 13 episodes.
