I'd say start with The Trial, The Castle's a bit maddening for someone reading one of Kafka's novels for the first time.

It would be at least a year before you could read any of Kafka's novels. If you want to read it, just read it.

I don't know about the others, but if you're going to read The Castle, you'd do well to track down a copy of The Castle: Definitive Edition. It's got an "homage" (in lieu of a forward) from Thomas Mann and it's a pretty solid translation.

Also, ignore any translation of The Trial which substitutes "traduced" with "telling lies" in the first sentence.
