Where do I start with this lad? I constantly hear good things about him, and a lot of stuff I like has referenced him or been allegedly influenced by him.

Start with Metamorphosis and then do The Trial and The Castle.

Bank up any of his short story collections then go to Metamorphosis

I would recommend leaving The Trial (and other 'longer' works) until after you've read a couple of the shorter ones. I personally began with In The Penal Colony. Metamorphosis could potentially come next (it's novella in length) then attack The Trial.
