The High Sparrow starts a populist religious revolt, the red priestess of Volantis calls for a crusade of fire, Daenerys eating a horse heart in a religious ritual is a huge deal and is what gets the Dothraki on her side, the brotherhood without banners and much of Stannis' army are religious converts, there's that whole sequence in AFFC where Brienne visits the monastery, the Nights Watch all swear their oaths to the old gods beneath a weirwood tree, etc. etc. etc.
For POV characters you have Melisandre, Catelyn, Sansa, Aeron, Davos, and arguably Bran (whose entire arc is a mysticism fever dream).

This has been my headcanon for a while with the end game I think it'd be really poetic if GRRM ended it in a bookend sort of way with a Stark and Targaryen alliance setting things right after one pretty much almost damaged the kingdom beyond repair.

Part of me thinks one of the reason Davos is going to Skagos in search of Rickon is not only to get the child but to be offered as a sacrifice as payment for giving Rickon back to the mainland. Maybe Manderly cut a deal with the natives if he gave them a suitable sacrifice,and Davos just so happens to be that person who fits all the requirements. Can't shake the feeling that a lot of Davos's storyline in Winds seems to be inspired by The Wicker Man. He's essentially going to an island in search of a missing child who may or may not even be there with the power of a king(Stannis). He's just not a virgn, but maybe a fool.

The reason why all the families in Westeros are thousands of years old is because the family names were just categorizations for people who came from certain areas for blood sacrifice.
