The late work is more 'tolerable' post-Border Trilogy for your purposes. The Stonemason is a short read and picks up where the epilogue of BM leaves off (it picks up in the second half). Child of God and Outer Dark aren't going to be sufficiently differentiated from BM to be suitable, but Orchard Keeper might do it for you (moonshine bootleg driver, crazy old coot, funny kid). Suttree will filter you yet again. Probably try No Country to start.

You aren't obligated to like any particular book, much less a particular out-of-context quote on the internet, but I promise you that Cormac McCarthy was not stupid or a clumsy writer. If you're working through a list of "classics", try to assume there's a good reason why each book earned that reputation and invest yourself in seeing it the way other people see it. The passage you posted is describing the sun rising, not setting. It's pretty clear for several reasons:
1. The sun is described as "in the east".
2. The "top" of the sun "rises".
3. They're described as riding out of the night, indicating daybreak.
