So why did Harry and Voldemort HAVE to fight to fight it out? Couldnt Voldemort just ate shit until Harry died? I mean he was immortal..

Because Voldemort was compelled to kill Harry. The Prochecy names him as "the one who will vanquish the Dark Lord," and tells that "He shall have power the Dark Lord does not." Voldemort, who is obsessed with his own power, and terrified of his own mortality cannot abide either idea. The irony of it all is that Voldemort shapes Harry into his enemy by killing his friends and family. The Prophecy would not have come true had Voldemort not tried to prevent it.
